Gluten – Culprit or Saint?

Gluten is a protein found in grains such as wheat, rye, barley and triticale. It is abundantly part of the standard American diet (SAD) and you consume it in breads, waffles, French toast, pancakes, pizzas, cakes, pies and etc. While most people's bodies have the ability to process it just fine, that may not be true to all. More and more folks are being diagnosed with gluten sensitivity or intolerance, while others even suffer from Celiac disease: an autoimmune gluten disorder that affects about 1% of the population. While doctors and scientists aren't sure that the consumption of gluten can actually cause the intolerance or not, our articles come to bring awareness about the symptoms of gluten intolerance, as often times we don’t even know we have it.
